Check out this idea for the holidays, a spiral ham kicked up a little with some BBQ spices and grilled outside. This post won’t include any actual recipes as recipes for rubs and glazes can be found all over the web or easily bought.
First we took a bone-in spiral ham. The great thing about the spiral ham is generally they come fully cooked and kind of pre sliced. All you are doing is heating them up. Then we added some bbq spices by incorporating a bbq spice rub. For this ham, we use BBQ master Myron Mixon’s rib rub, which can be bought on his site.We poured the rub all over the meat and rubbed it until the ham was covered on all sides and even a little into the slices of the spiral ham.
Next we wrapped the ham in aluminum foil and placed them into a grill in the 320-345 degree range set up for indirect grilling. If you are not familiar with indirect grilling you can check out my earlier post about the filet mignon sliders where I discuss the method and posted some video, we just do not use the direct grilling portion for the ham.
The spiral hams will generally have instructions to cook them to 140 degrees. To be honest, they generally will start drying out at that point. Since the ham is already fully cooked, I just cook mine to 120 degrees. I then remove the ham from the foil, and apply my maple glaze. Most hams will come with a glaze packet or you can make your own. I then toss the hams back into the grill without foil for 5-10 minutes to let the glaze get nice and sticky.
